Summer Cucumber/Tomato/Onion Salad
It’s summer here in NW Arkansas right now and the farmers markets and stands are everywhere with fresh vegetables. I even have a pot with grape tomatoes growing on my deck. So I decided to use some fresh veggies for a cool salad using cucumbers, tomatoes and purple onions.
Ingredients
- One large Cucumber, peeled, sliced and halved.
- Grape or Cherry tomatoes, 10-12 whole or halved
- Purple onion, 1 small, chopped
- Olive Oil, 3 tablespoons
- Salt and pepper to taste
Tools
- Cutting board and knife
- Vegetable peeler
- Mixing bowl with lid
- Serving bowl and fork or spoon to serve
Directions
- Wash tomatoes and cucumber
- Peel cucumber using vegetable peeler (I have a great one from Cutco), slice across into 1/2 inch slices and then cut those slices in half
- Place in mixing bowl
- Wash grape/cherry tomatoes
- Use whole cherry or grape tomatoes or cut themin half and place in mixing bowl
- Chop your purple onion into smaller pieces and place in mixing bowl
- Add salt and pepper to taste
- Drizzle olive oil over mixture in bowl
- Place lid on bowl and shake to mix well
- Refrigerate or serve immediately
- Serve cold from the frig in salad bowls
