Keto Green Bean Salad


Green beans are popular and used a lot when dieting because they are healthy and easy to prepare and very low carb.  Green beans are also called snap peas or string beans.  They have great health benefits for your body. Green beans are full of vitamins, minerals, fiber and water, as well antioxidants, flavonoids and flavor. You can serve them steamed, boiled and they can also be eaten raw or added to your favorite dish.  Some benefits of eating green beans are:

  1. They have a lot of Vitamin C
  2. Protein – Green beans are full of amino acids and supply you with 6% of your daily protein requirements in just two cups.
  3. They also provide a good dose of Iron
  4. The have flavonoids and antioxidants that help keep your arteries in good shape.
  5. They provide folic acid which is great for pregnant women.
  6. They have silicon which helps your bones and connective tissues.
  7. They contain contain beta-carotene, Vitamin A, and the antioxidants and flavonoids which help keep your eyes healthy.
  8. They are low in calories with only 30 calories per cup and are high fiber.

Ingredients

  • Green beans (fresh or canned), if canned, rinse, 3 cups
  • Grape or Cherry tomatoes, 6-20, halved
  • Feta cheese crumbles, 1 cup
  • Pitted black olives, sliced, 1/4 cup
  • Red onion, 1, chopped
  • Olive Oil, 3 tablespoons
  • Slivered Almonds, 1/8 cup
  • Minced garlic, 2 tablespoons
  • Salt and pepper to taste

Tools

  • Cutting board and knife
  • 1/2 and 1 cup measures
  • Mixing bowl with lid
  • Serving bowls and forks
  • Tablespoon measure

Directions

  1. Cook fresh green beans in boiling water until soft or open and drain 3 cans of green beans
  2. Place in mixing bowl
  3. Cut cherry or grape tomatoes in half and place in mixing bowl
  4. Chop black olives in half or use already sliced black olives and place in mixing bowl
  5. Pour feta cheese crumbles in mixing bowl
  6. Add chopped red onions
  7. Toast almonds in small skillet (light on olive oil) for 2-3 minutes
  8. Add slivered toasted almonds to mixing bowl
  9. Add minced garlic
  10. Add salt and pepper to taste
  11. Drizzle olive oil over mixture in bowl
  12. Place lid on bowl and shake to mix well
  13. Refrigerate or serve immediately
  14. Serve in salad bowls
