Keto Pepperoni Salad

I’ve been eating lower carb and keto for several months now in order to help get my blood glucose levels under control (I’m a Type 2 diabetic).  In the past months I’ve been experimenting with different “keto” recipes and meals.  I find that a salad is a good “snack” for me, especially a “keto salad.”

I try to use good fats and some acceptable protein in each of my keto salads.

”Benefits of Olive Oil as a Salad Dressing:”
”Healthy fats are essential for overall good health. Some of the fats olive oil can reduce the risk of developing diabetes almost by half. An anti-inflammatory agent in olive oil fights the specific inflammation that is the underlying cause of diabetes.

Extra-virgin olive oil is made from pure, cold-pressed olives, whereas regular olive oil is a blend, including both cold-pressed and processed oil.  Use extra virgin oil when possible.”
