Keto Pepperoni Salad
I’ve been eating lower carb and keto for several months now in order to help get my blood glucose levels under control (I’m a Type 2 diabetic). In the past months I’ve been experimenting with different “keto” recipes and meals. I find that a salad is a good “snack” for me, especially a “keto salad.”
I try to use good fats and some acceptable protein in each of my keto salads.
Extra-virgin olive oil is made from pure, cold-pressed olives, whereas regular olive oil is a blend, including both cold-pressed and processed oil. Use extra virgin oil when possible.”
Ingredients
- Avocado, 1 each
- Pepperoni, slices 20 each
- Cucumber,diced 1 each
- Baby Spinach leaves, 2-3 cups
- Tomato chopped, 1 each
- Shredded cheddar cheese, 1/2 cup
- Extra Virgin Olive oil, 3 TBSP
- Salt and pepper to taste
Tools
- Cutting board
- Cutting knife – (I use my Cutco 6-3/4″ Petite Carver)
- Serving bowl with lid – 1
- Salad bowl – 2
- Forks – 2 forks
Directions
- Place 2-3 cups of baby spinach leaves in a mixing bowl (one with a lid)
- Peel and slice a large cucumber and place on top of spinach leaves
- Chop a tomato into small pieces and add to mixing bowl
- Place pepperoni slices in mixing bowl
- Pour shredded cheddar cheese into mixing bowl
- Drizzle olive oil on top of bowl ingredients (3 tablespoons)
- Place lid on mixing bowl and shake all ingredients
- Refrigerate until ready to serve.
Makes 3-4 servings of salad

Nice, I should try it one day. I usually just buy the ready made mixed vegetable packs and call it a day lol.
